Chocolate Almond Shortbread

1 cup butter, at room temperature
1/2 cup packed brown sugar
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/2 cup chocolate chips
- Cream butter, sugar and extract until light.
- Add flour and mix just until dough begins to hold together, and then mix in chocolate chips.
- Roll dough into 1 1/2 - 2 inch round balls and place, spacing them about an inch or two apart, on a baking sheet.
- Press whole almond into top.
Bake 25 to 30 minutes at 300F, or until cookies begin to very lightly brown.
Makes 24-30 cookies.
Christmas cookies are far too easy to overconsume. The original recipe did not have an oven temperature. Similar cookies are baked at around 300F.
