Chocolate Shortbread

1 cup butter
1/2 icing sugar
2 ounces semi-sweet chocolate, melted
1/2 tsp. vanilla
2 cups all-purpose flour
1/2 tsp. baking powder


  • Cream butter with icing sugar. Beat in vanilla and melted chocolate. Combine flour and baking powder. Add to mixture and knead with hands to combine.
  • Press dough into lightly buttered pan or roll out to 1/2 in thickness on floured surface and cut into shapes.


Bake at 325 F for about 20 minutes. Cut pan cookies into wedges.
