Ingredients
1 cup butter, at room temperature
1/2 cup icing sugar, sifted
1 tsp. vanilla extract
1/4 to 1/2 tsp. almond flavoring
1 tbsp. water
1 3/4 cups all-purpose flour
3/4 cups ground almonds
Candied Cherries (Any color)
- Cream butter with sugar. Beat in flavouring and water. Blend in flour and
ground almonds- use hands if necessary. Chill if too soft.
- Shape dough into crescents or wrap a small amount around a candied cherry to
form a smooth ball. Or, roll out on floured surface to 1/4 inch thickness
and cut into shapes with knife or cookie cutters.
Bake on ungreased baking sheet at 300 F for 15 to 25 minutes (depending on
type of cookie) or until very lightly browned.
Dust with icing sugar if desired then cool on rack. Or, rolled cookies may
be decorated with icing.
Makes 24-30 cookies.
These are very popular cookies. If you limit the number of cherries of a color then of you can make a game out of who got the lucky color.
