Mexican Pie

Ingredients
1 Medium Onion (chopped)
1 tbsp. Canola Oil
1 can (796 mL) Diced Tomatoes in juice
1 can (398 mL) Kidney Beans (drained)
1 can (341 mL) Whole Kernal Corn (drained)
1 tbsp. Chili Powder
1 cup Cornmeal
2 Eggs
1 cup Milk
2 cups Shredded Cheese

Instructions

  • Preheat oven to 350 F.
  • In a large skillet, cook onion in oil until transparent. Add the tomatoes, beans, corn and chili powder. Cook, uncovered on medium high until liquid evaporates and the sauce thickens (about 15 minutes). Stir often.
  • Pour mixture into a greased 9x13 inch baking pan. Spread cornmeal evenly over the surface.
  • In a separate bowl, beat milk and eggs together. Pour evenly over cornmeal. Sprinkle with cheese.

Baking

Bake at 350 F for 45-50 minutes. Cut into squares and serve.

Serves 5.

Pike's Comments

Quite an amazing dish which is full of flavor and fills the room with its aroma. Feel free to increase the ammount of Chili Powder if you like spicy foods.
